Peanut Butter Protein Bits (Low Sugar, High Protein)

These no-bake bites are the perfect combo of creamy, chocolatey, and just sweet enough—without the sugar crash. Packed with protein and made with real-food ingredients, they’re a great snack for active women who want something quick, satisfying, and blood sugar-friendly.

Ingredients:

  • ½ cup full-fat Greek yogurt or cottage cheese (blend if using cottage cheese for a smoother texture)

  • ¼ cup peanut butter powder (PB Fit, PB2, or Clean Simple Eats all work great)

  • 1 tablespoon natural peanut butter

  • ½ tablespoon pure maple syrup (just enough for a touch of sweetness)

  • ½ cup Lily's dark chocolate chips (stevia-sweetened = low sugar)

  • 1 teaspoon coconut oil

  • Flaky sea salt (optional but highly recommended!)

Instructions:

  1. Make the Base:
    In a bowl, mix the Greek yogurt (or blended cottage cheese), peanut butter powder, peanut butter, and maple syrup until smooth and creamy.

  2. Scoop & Freeze:
    Using a spoon or small scoop, portion the mixture into bite-sized balls onto a parchment-lined tray. Freeze for 30–60 minutes until firm.

  3. Melt the Chocolate:
    In a small bowl, melt the chocolate chips with the coconut oil in the microwave in 30-second intervals, stirring between each, until smooth.

  4. Dip or Drizzle:
    Once the bites are firm, dip them into the melted chocolate or drizzle the chocolate over the top. Sprinkle with flaky sea salt before the chocolate sets (optional but adds the perfect flavor pop!).

  5. Chill & Store:
    Place the bites back in the freezer or fridge until the chocolate hardens. Store in an airtight container in the fridge for up to a week—or keep in the freezer for longer.
